Peppers with cottage cheese

Ingredients

To serve 4 portions:

– 50 g red onions (1 red onion)

– ½ small lemon (juice)

– 150 g granular cream cheese (0.8 % fat)

– 150 g low-fat curd cheese

– ½ tsp mild curry powder

– salt

– 1 pinch of cayenne pepper

– 300 g small yellow bell bell pepper (2 small yellow bell peppers)

– 300 g small red bell pepper (2 small red peppers)

– 4 stalks dill

– 20 g pine nuts (1 heaped tablespoon)

Preparation steps

  1. Peel and finely chop the onion. Mix lemon juice with cream cheese, low-fat quark and 3-4 tbsp water in a bowl until smooth. Mix in onion. Season with curry, salt and cayenne pepper.
  2. Cut peppers in half, remove seeds and wash. Wash dill, shake dry and chop. Roast pine nuts without fat in a pan at medium heat.
  3. Fill bell pepper halves with cottage cheese mixture and serve sprinkled with dill and pine nuts.
